Carol's BEST CHICKEN YOU HAVE EVER HAD IN YOUR LIFE!!
 

6 tbsp all purpose flour
Salt and pepper to taste
4-6 chicken breasts
1/4 cup butter, divided
1 large onion, chopped
2/3 cup tomato juice
1-3 tbsp paprika
1 teaspoon sugar
1 teaspoon salt
1 bay leaf
2/3 cup chicken broth
2/3 cup sour cream

Directions
Combine flour, salt and pepper in a large resealable plastic bag; add the chicken pieces a few at a time and shake to coat. Melt 1 tablespoon butter in a large skillet. Saute onion until tender. Remove from pan and set aside. In same skillet, melt remaining butter and brown chicken on all sides. Combine tomato juice, paprika, sugar and salt; pour over chicken. Add bay leaf, broth and reserved onion. Cover and simmer for 45-60 minutes or until chicken juices run clear. Remove chicken to a platter; keep warm. Reduce heat to low; remove bay leaf and stir in sour cream. Heat through for 2-3 minutes. Do not boil. Pour sauce over chicken. The Best!!

 

 

 
Linda's Valentine Family Dinner Tradition
 
 

My family always enjoys doing things very festive for Valentine's Day! And why not? I love them all so much? It's our tradition to have a "Red" meal! If you'd like to start a Valentine Family Dinner Tradition of your own, here are some suggestions:

Spaghetti with Meatballs, in lots of Red Sauce. or

Chicken Parmigan (Be sure to place the cheese under the red sauce!)

Raspberry Fruit Jello Salad

Sweet Potatoes

Tomato Salad

Angel Food Cake with lots Strawberry topping with Strawberry flavored whipped topping or Strawberry ice cream

Be creative! Have fun! Make memories! Enjoy and love your family!

P.S. Linda's kids always insist on mashed potatoes dyed red with red colored gravy! It's a great family joke!

 

 

 
Sarah's Chocolate Dessert Sauce
 

A favorite for Valentine's Day!

4 Milky Way Bars slices
1/2 Cup of Water

Directions
Stir milky way bars and water over low heat, in small saucepan until smooth. Cool slightly, serve warm.

Store any leftovers in refrigerator. Reheat sauce to use again

Makes about 1 1/2 cups

 

 

 
Grandma Schutrum's Famous Molasses Cookies
 

3/4 cup shortening - melt in pan and add:
1 cup sugar
1/4 cup dark molasses
1 egg
2 tsp. baking soda
2 cups flour
1/2 tsp. cloves
1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt

Directions
Cover and refrigerate for approx. 1 hour. Roll into small balls ( I use a cookie scoop) and roll in granulated sugar. Bake at 350 degrees for 8 - 10 min. These have been a family favorite for many years. All the grandchildren ask for them!!

 

 

 
Julie's Slow Coooker Meatloaf
 

1.5 lbs ground beef
2 eggs, beaten
2/3 c fine dry bread crumbs
1/4 c milk
2T minced onion
1t salt
1/2t sage
1/2 c ketchup
2T brown sugar
1t dried mustard
1/2t nutmeg

Directions
In a mixing bowl, combine beef, eggs, bread crumbs, milk, onion, salt and sage. Shape into ball and place in slow cooker.

Cover and cook on LOW 5 to 6 hours.

15 minutes before serving, in a small bowl, mix together ketchup, brown sugar, mustard and nutmeg. Pour over meatloaf. Cover and cook on HIGH 15 minutes.

This is so good and so easy! You will love this on a cold winter's night! Enjoy!

 

 

 
Alane's Potato, Corn and Cheddar Cheese Chowder
 

This is one of my oldest and most favorite recipes, it's great on a cold winter day!

3 large potatoes, scrubbed and cubed with skins
4 C. boiling salted water
2 Bay leaves
1/2 tsp. sage
1/2 tsp. cumin
6 T. butter
2 onions, finely chopped
6 T. flour
2 1/2 C. heavy cream
2 bags of white "shoepeg" corn (can use regular sweet corn)
8 oz. grated cheddar cheese
1/4 C. dry white wine (or cooking wine)
Loaf of warmed crusty bread

Directions
Boil potatoes in salted water with bay leaves, sage and cumin until just barely tender, about 15 or 20 minutes, removing the bay leaves when done. While they are boiling, melt butter in a saucepan and saute the onion over med. heat till soft, then add flour 1 T. at a time, whisking after each T. Mix well, then add the cream whisking all together till smooth. Pour this sauce into the potatoes and their water, adding the corn and simmer gently about 10 minutes. Correct the seasoning (add salt and pepper to taste), stir in grated cheddar and wine, heat until cheese is melted. Serve with crusty bread. Serves 8-12
