The McLeod Family Favorite Broccoli Casserole
 

2 pounds fresh broccoli, cut into florets
1 can cream of mushroom soup, undiluted
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese
1 tablespoon lemon juice
1 cup crushed cheese-flavored snack crackers

Place 1 inch of water and broccoli in saucepan; bring to a boil. Reduce heat; cover and simmer for 5 - 8 minutes or just until crisp-tender. Drain and place in a greased 2-quart baking dish. In a bowl, combine the soup, mayonnaise, cheese and lemon juice. Pour over broccoli. Sprinkle with crushed crackers. Bake, uncovered, at 350 for 25 - 30 minutes or until heated through. Yield: 6-8 servings.

I always have to double this recipe for the 8 of us because it is just too good to be true! Guaranteed to disappear off your table!

 

 

 
Melissa's Sweet and Sour Meat Loaf
 

1 egg
5 Tablespoons ketchup, divided
2 Tablespoons prepared mustard
1/2 cup dry bread crumbs
2 Tablespoons onion soup mix
1/4 tsp. salt
1/4 tsp. pepper
1 pound ground beef
1/4 cup sugar
2 Tablespoons brown sugar
2 Tablespoons cider vinegar

In a bowl, lightly beat the egg. Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into an oval loaf. Place in a shallow 1 qt. microwave-safe dish; cover with waxed paper. Microwave on high for 11-12 minutes or until meat is no longer pink; drain. In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meat loaf. Microwave on high for 3-5 min. Let stand for 10 minutes before slicing. 4 servings.

This is a great meal when you are crunched for time and still want to put a nice dinner on the table, my family loves it!! Also, it's a great meat dish when you are taking someone a dinner, it's quick, easy and everyone loves it. ENJOY!!

 

 

 
Linda's Guacamole Salad
 

Serve as an appetizer with corn chips or croutons.

2 avocados, peeled, pitted and chopped
1 tomato, chopped
2 green onions, chopped
1 cucumber, peel & chop
2 T lime juice
1 clove garlic, minced
1/4t garlic powder
3/4t salt
1/2 t pepper
1 T dried parsley
hot pepper sauce to taste

Toss ingredients together gently; cover and refrigerate until ready to serve. Serves 4.

 

 

 
Sarah's Chocolate Peanut Butter Pizza
 

What could be better than chocolate and peanut butter?

1/2 cup butter, room temperature
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup peanut butter, room temperature
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1 (12-ounce) package semi-sweet chocolate chips, divided
1/4 cup peanut butter
Topping suggestions are belowŠ

Preheat oven to 350 degrees.
Lightly grease a 12- to 14-inch pizza pan.

In a large bowl, cream butter, sugar, brown sugar, and peanut butter until light and fluffy.

Beat in egg, flour, and baking soda. Stir in 1/2 of the chocolate chips.
Using your fingers, spread or press the dough onto the pizza pan, leaving a one-inch edge as the cookie will spread as it bakes.

Bake 18 to 24 minutes until light brown. Remove from oven and immediately sprinkle remaining chocolate chips over the top and drop spoonfuls of peanut butter over the top; let rest for approximately 5 minutes or until chocolate is shiny and soft.

With a knife, smooth out the chocolate. Add Toppings of your choice.
Let pizza cool before cutting and serving. Serve at room temperature.

NOTE: The pizza may be made ahead and refrigerated, covered, until ready to use. To use, bring to room temperature before cutting and serving (if you don't bring to room temperature, it will crack when sliced).

Topping Suggestions:
Have all your desired toppings ready before placing chocolate pizza in the oven, as they must be put on when the pizza is hot.

Heath candy bars, coarsely chopped
Butterfinger candy bars, coarsely chopped
Miniature marshmallows
Maraschino cherries
Chopped nuts (hazelnuts, peanuts, almonds, pecans)
Shredded, sweetened coconut
Banana, peeled and sliced
Melted white chocolate
Dried apricots, chopped
Dried cherries

 

 

 
Julie's Butterscotch Picnic Cake
 

1 package of white cake mix
1 Egg
1 can of Butterscotch pudding
1-12oz. package of Butterscotch chips

In a large mixing bowl combine cake mix, egg, and pudding. Mix well for 3 minutes. Pour into a greased 13 x 9. Sprinkle Butterscotch chips on top. Bake at 350 for 45 minutes.

This is my family's all time favorite cake and it only takes about 5 minutes to make. If you like Butterscotch, you'll love this yummy cake!
